
Now that fall is here, I have been grabbing my crockpot at least once a week. Crockpot recipes are so easy and delicious! This pumpkin chili recipe is a classic with a fall twist! Hope you enjoy!
Pumpkin Chili
Ingredients
- 1 pound of ground beef
- 1 onion, chopped
- 1 green bell pepper, diced
- 2 cloves of garlic, minced
- 14oz can crushed tomatoes (do not drain)
- 15oz can pumpkin puree
- 2 cups diced butternut squash
- 15oz can of beans, drained (Your choice! I used red kidney beans for mine.)
- 2 tbsp chili powder
- 2 tsp cumin
- 2 tsp smoked paprika
- 2 tsp pumpkin pie spice
- salt & pepper
Directions
- Dice butternut squash, onions, and bell pepper.
- Add all ingredients to crock pot, stir together.
- Cook on low for 4 to 6 hours.
- Season to taste with salt & pepper if needed.
Some chili recipes tell you to brown the meat prior to adding it to the crockpot. This is totally up to you!
