This pasta salad will become a go-to summer recipe! It’s an easy lunch that you can top with grilled chicken or shrimp, or a side dish hit to bring to a weekend cookout!
Ingredients:
- 1 box of bow tie pasta (12oz)
- 1 clove of garlic- crushed
- 1 lemon
- ¼ cup olive oil
- 3 tbsp fresh chopped basil
- 1 cup frozen peas
- Salt and pepper
- 1/4 cup shredded parmesan cheese
- True Citrus Lemon Pepper (optional)
To cook:
- Let frozen peas thaw at room temp or cook according to packaging and allow to cool.
- Cook pasta according to packaging. Rinse with water to cool, or drizzle with olive oil and set aside to cool.
- Zest lemon (about 1 tbsp) and chop basil.
- In a bowl combine olive oil, lemon juice (1/4 cup), garlic, and salt and pepper.
- Toss pasta with lemon dressing, peas, chopped basil, lemon zest, and parmesan cheese.
